Dariusz Plazewski, a Polish man with a moonshining family background, founded Bimber Distillery. "Bimber" means 'moonshine' in Polish. Plazewski wanted to mix Polish distilling traditions with London's craft drink scene. Bimber Distillery takes a hands-on approach. The team handles everything, from picking the best ingredients to distilling and bottling. They use traditional copper pot stills and make small batches for quality control. Their single malt whisky is well-known. It uses barley from one farm, which adds a unique touch. The whisky is fermented in wooden washbacks and distilled in copper pots. This method is generations old. The whisky ages in different casks, like ex-bourbon, sherry, and virgin oak. This process gives it a rich, complex taste.
