Check it out! Our very own 2025 Father's Day Reserve, and it's a belter of a single malt from Caol Ila. Distilled in December 2008, the whisky spent 16 years maturing in an oloroso sherry hogshead before we earmarked it for this special Father of Malt edition, cracking open the cask to release a total of 491 bottles. That's 491 very happy Dads. If it gets to them before everyone else, that is... It's one supremely gluggable dram.

Caol Ila 16 Year Old Father of Malt (Master of Malt) Single Malt Scotch Whisky | 700ML Tasting Notes

Nose: Salted peanuts, baked apple, rich peat, then earthy, fruity notes of dandelion and burdock. There's creaminess beneath with notes of vanilla, chocolate nuts, toffee, and shortbread, then waves of porridge and smoked tea.

Palate: It's a goodie! Brimming with layers of peat smoke, with notes of smoky cured meats, a touch of fennel, then sweeter suggestions of rooibos tea and dried red fruits. There's some peppercorn and candied ginger heat in tow, but creamy oaken vanilla keeps it in check.

Finish: Vibrant and long, with sweet peat, roasty coffee, grilled peach, a hint of hibiscus, cracked pepper, and Kola Cubes.

Distillery Information

Caol Ila was founded to the North of Islay in 1846 by the pleasingly-named Hector Henderson. It is located near Port Askaig and sits in lush, floral surroundings, overlooking the cove and the Paps of southern Jura. The distillery draws its water from Loch Nam Ban, whose waters travel through limestone and peat before reaching their beneficiary, Caol Ila. The whisky distillery was sold to Norman Buchanan in 1852 and then, following monetary hardship, to the Glasgow-based blenders Bulloch, Lade and Co who renovated the buildings in 1879. Following liquidation, Distillers Company Ltd acquired Caol Ila and the distillery was subsequently transferred to Scottish Malt Distillers. The capacity is moderate at 3.65 million litres annually, the majority of which is used in Johnnie Walker blends. Just 5% is kept for maturation as single malt.
