With no added flavors or coloring, this naturally caramel-colored spirit is aged for a minimum of two years in new and used charred American white oak barrels before being finished in French oak port and oloroso sherry barrels, adding to its distinct character. This American whiskey offers aromas of baked apple, honey drizzled over fresh fig, lavender, graham crackers, overnight oat groats with peaches and cream, dried white daisies, cinnamon stick, and tobacco, along with flavors of vanilla-glazed banana bread, warm granola with dried fruit, and frangipane tart.

Nose: Aromas of baked apple, honey drizzled over fresh fig, lavender, graham crackers, overnight oat groats with peaches and cream.
Palate: Fresh apricots, toasted marshmallow, and roasted walnuts.
Finish: A hint of smoked lemon peel on the finish.
Distillery Information
High West distillery was founded by David Perkins in 2007 and has subsequently made a name for itself through a series of truly outstanding blended rye whiskeys. Their ryes are some of the best we've ever tasted, but are not in fact distilled at the High West distillery (as opposed to their oat spirits, which are). At the time of writing, following the release of a Western Oat unaged 'silver whiskey', we're eagerly anticipating a 100% barley single malt.
