Size: 720ML

Proof: 30 (15%ABV)

Origin: Japan

Distillery: IWA 5

Intense, pure, highly defined. The first notes are bright, intriguingly vegetal, more floral than fruity. The sake calls for a moment of respiration to grow more complex through darker lower tones. White pepper, IWA's aromatic signature, is clearly present. One is instantly struck by the impression of superlative balance and coherence. The weightlessness of the sake unfolds with great tonicity. All sensations seamlessly converge, drawn to a racy, tactile, intense, mouthwatering, endless finish.

Iwa 5 Sake Assemblage 3 | 720ML Tasting Notes

Palate: Balanced and rich flavors.

Finish: Racy, tactile, intense, mouthwatering, endless finish.

Distillery Information

Founded and created by the former Chef de Cave of Dom Pérignon for 28 years, Richard Geoffroy, IWA is the ultimate sake for wine lovers and pleasure seekers. Richard envisaged and created a truly versatile sake that pairs perfectly with all fine cuisines of the world– including, but not limited to just Japanese cuisine. To achieve the required level of balance and harmony, about twenty different junmai daiginjo sakes using three different rice varieties, from four different terroirs and five different yeast strains are blended each year. The resulting 'Assemblage,' matured in the bottle for over one year, is rich, yet weightless, and continues to evolve and gain complexity over time. Shifting the global expression of classical sake to a greater equilibrium between nose and palate. Palatability is a key facet of IWA, and a distinct bridge between the worlds of sake and wine. IWA is particularly appealing to chefs and wine collectors, just like the most iconic champagnes and wines. The contemporary kura (brewery) in Toyama, Japan was designed by globally renowned architect, Kengo Kuma and the sleek, dark bottle by the industrial designer, Mark Newson, who is also known for having designed the Apple watch.
