Lamata Ensamble Tradicional Tamaulipas is a blend of wild-harvested agave and Desert Spoon plants, produced by Maestro Jose Castellanos in Las Virgenes, Tamaulipas, Mexico.  The production process involves roasting the agaves in earthen pits, crushing them with a Trapiche, naturally fermenting the juice, and distilling it using a moonshine-style still, likely acquired in Texas. Due to the challenges of producing spirits in Tamaulipas, and the small-scale production methods, Lamata Ensamble Tradicional Tamaulipas is a rare and sought-after spirit. 

Lamata Ensamble Tradicional Tamaulipas Familia Teran Agave Spirit Tasting Notes

Nose: Muscat grapes, broiled prawns, tomato water, and oregano.

Palate: Sweet, pickled jalapeños, a slight creamy note, spices, and dry wood.

Finish: Deep, sweet, long, and complex, with the sweeter notes becoming more prominent.
