The Ferroni Brut de Fût Australie 2013 Paradis is a molasses rum distilled in pot-still and then aged in American barrels for three years in Australia, followed by a second three-year aging in Provence in French oak barrel ex-muscat from Beaumes-de-Venise, followed by four years in barrels of vintage Cognac. The first aging is tropical: hot, humid, without major temperature variations. The second aging is Mediterranean: very hot summers (even more than in the Caribbean) and dry, with cold winters. The thermal amplitudes are important. This aging accelerates the maturation of rums in as much way as in a tropical, with an often higher share of angels.
