This blend features 50.1% Glen Ord 2016 and 49.9% Clynelish 2016, both matured in refill hogsheads. To enhance the flavor, the malt is finished in a freshly emptied refill sherry butt, bringing out fuzzy stone fruit notes. Bottled at a smooth 44.4%.

Thompson Bros North 8 Year Old Batch #2 Highland Blended Malt Scotch Whisky | 700ML Tasting Notes

Nose: Bright aromas of kiwi, starfruit, and crushed white grapes, with hints of Loire Chenin Blanc, wet marble, and lemon zest. A touch of salty brine, gooseberries, osmanthus flower, and oak char add complexity.

Palate: Tangy citrus peel, bergamot, and grapefruit, layered with wood spice and charred oak. Ripe pineapple, green pepper, blackthorn salt, white grape juice, and chamomile bring vibrancy.

Finish: Lemony zest with chamomile, kiwi, and a dash of white pepper. Long-lasting with a gentle waxy texture.

Not content with establishing one of the World’s leading whisky bars in Dornoch, brothers Phil and Simon Thompson have upped their ambitions and started making their own whisky and gin on-site at Dornoch Castle Hotel, forming Dornoch’s first whisky distillery. Dornoch Distillery was born out of a successful crowdfunding campaign which saw 200 whisky enthusiasts from all over the world dig deep in support of the philosophy of bringing old styles of distillation back to life.
