      Producer Information

      Domaine Jacques Carillon is a wine producer based in the village of Puligny-Montrachet, in Burgundy's Côte de Beaune subregion, producing a range of wines from local and neighboring vineyards, predominantly from the local mainstay: Chardonnay. The estate has a winemaking history going back to Jehan Carillon who was producing wines in the region in 1520 of whom current owner Jacques Carillon is a descendant. The current vineyard holdings cover five hectares (12.5 acres), predominantly in Puligny. Carillon and partner Sylvia produce a range of labels including the Grand Cru Bienvenues-Bâtard-Montrachet as well as a number of Puligny-Montrachet premiers crus: Les Champs Canet, Les Referts and Les Perrières. Other wines include a standard Puligny-Montrachet "village" and a Saint-Aubin premier cru from Les Pitangerets. Vinification is relatively straightforward with pressing followed by a short settling time before the juice is racked to barrel. Vinification is done in oak barrels, of which up to 25 percent are new oak – although this depends on the cuvée.
