The wine is fermented spontaneously and aged for five months in amphorae, resulting in a unique expression of the grape's character.

The winery is known for its focus on indigenous Cypriot grape varieties and organic viticulture, producing terroir-driven wines from their privately-owned vineyards. Theodoros Makarounas, a graduate in Oenology and Viticulture from UC Davis, leads the winemaking with a philosophy that emphasizes the importance of the vineyard.
