Ben Nevis Single Malt Scotch Whisky is made exclusively from malted barley, which is milled and mashed before being fermented with a brewer's yeast. "This has the texture of dough or putty and is vital to the process of fermentation," said McDonald over a century ago of the brewer's yeast. Today, the distillery is one of only a handful that continues to use the special yeast as it is believed to provide whisky with more texture and character as compared to distiller's yeast. Following fermentation, the wash is twice distilled through Ben Nevis' copper-pot stills.
Ben Nevis 1992 21 Year Old Single Malt (Signatory Bottling) Scotch Whisky Tasting Notes
Nose: Golden copper along, along with an aroma of apricots, cherries, malt and honey.
Palate: Notes of red fruits (particularly plums and berries), sherry and grapes, which are complemented by subtle touches of cinnamon, cloves and caramel on the palate.
Finish: Finish is complex and sweet, with notes of dark fruits mingled with notes of baking spices.
