Initially it was matured in American oak casks before being finished in a Sauternes wine cask, bringing plenty of sweet fruit notes to the flavour profile. 258 bottles were produced as part of The Cooper's Choice range.

Nose: Marmalade, toasted marshmallow, a whiff of scorched oak.

Palate: More orangey sweetness, balanced by festive spices. Candied grapes, toffee, shortbread.

Finish: More cinnamon and clove, with a subtle mineral dryness.
