Beautiful, fresh, clean and inviting first impression on the nose with lovely floral, vanilla and peach notes. It has a bit of citrus and even lemongrass and some hay emerges later. It is unique but still reminiscent of some of the greatest Scotch Malts of the lighter, clean and elegant style. There's a touch of fresh grain and maltiness but the ageing worked beautifully.

In 2018, Hilary had the “crazy idea” to create a distillery on St Mary’s, Isles of Scilly where her family had lived for over 60 years. The islands were home for not only her grandmother (who lived until she was nearly 102), but also where her mother and father first met.
